Red Braised Pork Belly, 红烧肉

Growing up my mom and grandma loves making red braised pork belly for dinner. We would have it at least once per week for dinner. Simple recipe that comes with very easy steps.

Ingredients:

  • 2 slices of pork belly (2 persons portion)
  • 4 slices of ginger
  • 30 grams of rock sugar
  • MSG (optional)
  • Some chopped spring onion
  • 2 tablespoon of cooking wine
  • 3 tablespoon of dark soy sauce
  • 2 tablespoon of light soy sauce
  • 1 star anise
  • 1 cinnamon stick

How to cook Red Braised Pork Belly:

  • Cut pork belly into cubes before boiling the pork belly for 5 minutes with spring onion and ginger to remove the impurities.
  • Dunk the pork belly in a bowl of ice water after removing the impurities.
  • In the wok, add cooking oil under medium heat before melting the rock sugar in the wok and add some water and cooking wine.
  • Add the pork once the sugar melts and stir fry it until the pork are slightly brown.
  • Add star anise, cinnamon stick, spring onion to the wok before adding dark and light soy sauce and MSG.
  • Turn down to low heat and put the lid on before leaving it on the stove for 1.5 to 2 hours.

Once done, transfer the glistening pork + sauce into a bowl and have it with a bowl of fresh rice.
