Simple salad I’d make whenever Kale is in season or on sale.
Ingredients:
- Kale
- Pine nut
- Red onion (diced)
- Rocket salad
- Fruit of your choice
- Grandma heirloom tomato (diced)
- Olive oil, balsamic vinaigrette and salt
Instructions:
- In a pan under medium heat, pan fry the kale leaves until they’re slightly crispy then set it aside.
- In a big bowl, combined kale, pine nut, red onion, rocket salad, and grandma heirloom tomato together before drizzling olive oil, balsamic vinaigrette and salt – mix them well. The ration for the salad dressing is 3 parts oil, and 1 part vinaigrette.
- Once done, top it off with the fruit of your choice and it’s ready to be eaten!
