Cacio e Pepe (Black Pepper and Pecorino Romano)

A nice cacio e pepe recipe is based on simplicity. Every step of this dish is straightforward, with the only bit of effort required to grate the cheese.

Ingredients:

  • 70g Pecorino or Parmesan cheese finely grated
  • Pasta (2 person portion)
  • 3 cups of pasta water
  • 2 teaspoons freshly ground pepper

Instructions:

  • Cook the pasta until it’s al dente.
  • In a bowl with grated cheese, add 2 cups of pasta water and mix it well.
  • Heat a pan over medium and lightly toast the black pepper until it gives off a subtle, fragrance.
  • Add 1 cup of pasta water to the pan before adding the cooked pasta.
  • Pour the grated cheese with pasta water mixture and continue to stir it well.

If you like a little spice, feel free to sprinkle some chili flakes on the pasta.
