Broccoli Pasta

Broccoli Pasta

Something light and simple yet deliciously healthy at the same time.

Ingredients:

  • Mafalde Corte
  • 1 chili
  • 2 cloves of garlic
  • 2 parsley stem
  • A handful of chopped parsley
  • Half bunch of broccoli
  • Pecorino cheese (optional)
  • Salt

Instructions:

  • Cook the pasta (I’ve chosen Mafalde Corte for this recipe) to al dente.
  • Olive oil to the cooking pan under medium heat, add garlic and parsley stem and pan fry till the garlic is slightly brown. Remove the garlic and parsley stems when they’re slightly brown.
  • Add sliced chili to the pan for 2 minutes before adding the broccoli to the pan. Seasoned it with salt and pecorino cheese and taste it along the way.
  • Add the pasta to the pan and mix it well. Continuously add more water while you mix the pasta well if the pasta looks dry. At this point you can add parsley leaves for a pop of color and taste.
  • It is ready when the pasta is mixed well till it turns creamy. Add some pecorino cheese on top of your pasta if you’d like some extra fun!
