A recipe inspired by Lebanese Balila whilst I crave for chickpeas.
Ingredients:
- 1 can of Chickpeas
- Half lemon/ lime
- Olive oil
- 1 or 2 cloves of garlic
- Salt & cayenne pepper
Instructions:
- Drain the chickpeas, then cook them in water for 7 to 10 minutes or until the water begins to boil.
- Crush the garlic using pestle and mortar with some salt.
- Add 3/4 of the chickpeas with a 1/4 ladle of the warm chickpea water to a bowl with the garlic and lemon juice. Blend this well with a blender.
- Add olive oil to the blended chickpeas.
- Using the pestle, roughly crush the remaining chickpeas that you haven’t blended.
- On a plate, place the blended chickpeas first, then add the unblended chickpeas on top.
- Sprinkle some cayenne pepper on top if you want slight spice to add more flavour, or just so it looks more colorful.
