Cold nutty noodles that is best eaten during hot summers.
Ingredients:
- Wheat noodles (or any noodles you prefer)
- 500 gram of tofu
- 1.5 times water – maintaining a 2:3 tofu-to-water ratio
- 2 tablespoon of sugar
- 1 tablespoon of salt
- 4 tablespoon of roasted sesame
- 2 or 3 tablespoon of peanut butter
- 2 cherry tomatoes
- Some slices of cucumber
How to prepare Kong-Guksu:
- In a blender, blend the tofu, water, sugar, roasted sesame, salt and peanut butter.
- Once the noodles are cooked, dip it in ice water.
- Plate the noodles in a plate and pour the blended tofu sauce to your bowl.
- Add the toppings – cherry tomatoes, cucumbers and roasted sesame.

To my surprised, it is a very filling meal. Lovely meal to have during the hot summer.
