Kong-Guksu (Korean cold noodles)

Cold nutty noodles that is best eaten during hot summers.

Ingredients:

  • Wheat noodles (or any noodles you prefer)
  • 500 gram of tofu
  • 1.5 times water – maintaining a 2:3 tofu-to-water ratio
  • 2 tablespoon of sugar
  • 1 tablespoon of salt
  • 4 tablespoon of roasted sesame
  • 2 or 3 tablespoon of peanut butter
  • 2 cherry tomatoes
  • Some slices of cucumber

How to prepare Kong-Guksu:

  • In a blender, blend the tofu, water, sugar, roasted sesame, salt and peanut butter.
  • Once the noodles are cooked, dip it in ice water.
  • Plate the noodles in a plate and pour the blended tofu sauce to your bowl.
  • Add the toppings – cherry tomatoes, cucumbers and roasted sesame.

To my surprised, it is a very filling meal. Lovely meal to have during the hot summer.
