- 2 large ripe tomatoes
- 3 large eggs (4 if small eggs)
- Vegetable oil
- 1 teaspoon of fish sauce
- Ketchup
- Worcester sauce
- Soy sauce
- Salt
- Chopped green onions (optional)
- Chopped chives (optional)
- MSG (optional)
How to cook Chinese Tomato Egg Stir-fry:

- Dice the tomatoes into bite-sized pieces and soak it in salt water.
- Beat the eggs in a bowl and season with a pinch of salt and MSG. You can add a teaspoon of cooking cream or milk so the eggs is fluffier.



- In a cooking pan with vegetable oil over medium heat, pour in the beaten eggs and gently scramble until it’s half-cooked. Remove the eggs from the pan and set aside.
- Add green onions and chives to the pan before adding the tomatoes.
- Cook the tomatoes until they start to soften and add a spoonful of ketchup for taste and a dash of Worcester sauce, soy sauce and fish sauce .
- Add the eggs back and season it with salt according to your taste.
