Chinese Tomato Egg Stir-fry, 番茄炒鸡蛋

It’s a fast, cheap, easy, and made with simple, everyday ingredients that warms your heart up.

Ingredients

  • 2 large ripe tomatoes
  • 3 large eggs (4 if small eggs)
  • Vegetable oil
  • 1 teaspoon of fish sauce
  • Ketchup
  • Worcester sauce
  • Soy sauce
  • Salt
  • Chopped green onions (optional)
  • Chopped chives (optional)
  • MSG (optional)

How to cook Chinese Tomato Egg Stir-fry:

  • Dice the tomatoes into bite-sized pieces and soak it in salt water.
  • Beat the eggs in a bowl and season with a pinch of salt and MSG. You can add a teaspoon of cooking cream or milk so the eggs is fluffier.
  • In a cooking pan with vegetable oil over medium heat, pour in the beaten eggs and gently scramble until it’s half-cooked. Remove the eggs from the pan and set aside.
  • Add green onions and chives to the pan before adding the tomatoes.
  • Cook the tomatoes until they start to soften and add a spoonful of ketchup for taste and a dash of Worcester sauce, soy sauce and fish sauce .
  • Add the eggs back and season it with salt according to your taste.
