Heirloom Tomato Salad

Heirloom tomato salad is best enjoyed in late summer to early fall when heirloom tomatoes are in season and at their peak flavor, but when it’s available in the market anytime of the year, there is no harm in making the salad regardless as they’re fantastic for a gentle day!

Ingredients:

  • 2 heirloom tomatoes (a mix of yellow and read would be fantastic)
  • Olive oil
  • Balsamic vinegar (optional)
  • Thin slices of red onion (up to your preferences for the amount)
  • Mozzarella balls or cherry Bocconcini (shred them)
  • Pine nuts
  • Capers

How to prepare the salad:

  • Slice the heirloom tomatoes and plate them on your favourite plate.
  • Sprinkle the sliced red onion, Bocconcini or Mozzarella, pine nuts and capers.
  • Drizzle the olive oil + balsamic vinegar (optional) all over the salad and add salt + pepper.
