One of my favorite childhood food that we get from the night market.
Ingredients:
- 3 slices of ginger
- 3 slices of galangal
- 6 cloves of garlic
- 2 red shallots (from Asian grocer)
- 2 to 3 lemongrass
- A few pieces of curry leaves + dried chilli
- 4 drumsticks
- A dash of salt and tumeric
- 1 tablespoon of corn flour
- 1 tablespoon of Babas meat curry powder
How to make Malaysian Spiced Fried Chicken:
- In a blender, blend your ginder, ginder, galangal and shallots with a dash of water. Add the lemongrass after blending the previous ingredients.
- In a bowl, mix your blended ingredients with corn flour, Babas meat curry powder, salt, tumeric well before marinating the drumsticks. Marinate the chicken for at least 1 hour.
- Start drying your chicken when they’re ready in a medium heat pot with vegetable cooking oil. Fry the chicken for at least 15 minutes. Throw in curry leaves and dried chili for some extra burst of flavour.
Once it’s done, you can serve it with rice or salad!
