What makes pesto pasta addictive is the hint of pine nut in your pesto together with the greens that makes it taste refreshing and addictive at the same time! This is a simple recipe for anyone that wants something healthy but didn’t have the time to make your pesto from scratch. In this recipe however I did use a hand blender. You can get it at Amazon
Ingredients
- 3 tablespoon of pesto paste
- 2 handful of grated cheese (parmesan)
- A handful of pine nuts
- Rigatoni pasta
- 1 to 2 tablespoon of butter (depends on your preferences)
- Sliced white mushrooms (optional)
- A dash of garlic salt
- 2 cloves of minced garlic
- 1 cup of pasta water
- 2 cups of heavy cream
- Flake chili (optional)
How to make your Pesto Pasta:
- Cook the rigatoni pasta till it’s well done. Make sure to keep 1 cup of pasta water.
- While waiting for the pasta to be cooked, heat up a medium pan with olive oil and 1 tablespoon of butter and cook the sliced mushroom. Make sure you sweat out the mushrooms and keep them aside when they’re done.
- With the same cooking pan, add olive oil and brown the garlic. When the garlic turned brown, add pine nuts to the pan for at least 5 minutes before adding 2 cups of heavy cream and 3 tablespoon of pesto paste.
- Simmer the mixture in your pan in low heat before adding 1 cup of pasta water and sprinkle some cheese along the way.
- Once the rigatoni is done, add them with the mushrooms to the pan of pesto mixture. Stir them well and add more cheese to your liking.
