30-minute easy and healthy recipe, perfect for cold winter nights: a Finnish salmon soup. Lohikeitto as it is called in Finland is a creamy salmon soup made with leeks, potatoes and top with dills! The recipe below suits 2 persons portion.
Ingredients:

- 1 carrot (chopped)
- 500 ml of chicken or fish broth
- 1 leak (use the white part and the beginning of the green part)
- 1 potato (chopped into cubes)
- 300 ml of full cooking cream
- 2 salmon
- Dill (whichever portion you prefer, mince it)
How to make Lohikeitto:



- Prep your ingredients by cutting the leeks into thin strips. Chop and slice the carrots and cut the potatoes into cubes. Cut the fresh salmon into large cubes and your dill dill finely. Set the salmon and dill aside.
- In a large pot, sauté the leeks and carrots in butter and olive oil.
- Once the leeks have reduced in volume by half, add the potatoes and chicken/ fish stock. Season with salt and black pepper and simmer for 15 minutes at medium heat until the potatoes are cooked.
- 10 minutes before serving, add the salmon chunks and 300 ml of cream. Cook over medium heat for 3-5 minutes until the salmon is cooked. Add corn flour to your soup if you like a more thicker texture.
- Turn off the heat and add the fresh dill to your pot, stir it for a little.

Serve it in a bowl and decorate it with more dill if you’d like and enjoy!
