Honey Cornflake Cookies

Childhood favourite to most Malaysians for Chinese New Year or Raya where friends and family would serve this gorgeous during an festive season!

All you need is honey, unsalted butter, and cornflakes!

I use 60 grams of honey, 60 grams of butter, and 40 grams of cornflakes. This is for 2 persons portion. If you wish to make for more persons, x2 for the portion of each ingredient!

Instructions:

  • Melt butter on your cooking pan over medium heat.
  • Melt the butter prior to slowly adding honey to the pan. Mix well and stir it continuously.
  • Remove the pan from the stove once the butter and honey mixture starts thickening. You’ll see little air bubbles appearing. The mixture must thicken or else your cornflakes will separate due to the lack of stickiness.
  • Add the cornflakes to the pan and make sure you stir them well. Coat each flake with the sticky goodness. You may add crushed nuts according to your preference.
  • Place the cornflakes into mini cupcake moulds if you have, if not just use a spoon and drop scoops of cornflake to a baking sheet.
  • Pre-heat your oven at 150C at least 8 minutes before popping your cornflakes in.
  • Make sure you cool it down before serving to the guests, or youself!

Voila! Here’s your Malaysian CNY or Raya cornflake cookies! I know it sounds misleading that there’s no dough needed to the process, but we truly adore this!
