Summertime Fregola 

Full of peas, lemon, zucchini — perfect to curb the heat!

Ingredients:

 1/2 a white onion, 1 medium courgette, 200g frozen peas, 4 cloves of garlic, 1 red chilli, 250g italian fregola, 1 tbsp fresh mint, 1 tbsp fresh chives, 1/2 lemon, 450ml vegetable stock/ chicken stock, salt, pepper, and olive oil

How to cook it:

  • Dice the onion, chilli and zucchini and mince the garlic. Get your chicken or vegetable stock ready after prepping your ingredients
  • Heat olive oil in a pan and begin to fry the onions with a pinch of salt until translucent for about 5 minutes. Then add the zucchini and fry for another couple of minutes before adding the garlic and chilli
  • Pour in the fregola and stir well so it’s coated in all the juices.
  • Add your stock and the frozen peas, bring it to a gentle boil and let simmer until fregola is plump and tender. Stir regularly so it doesn’t burn! This should take about 10 to 15 minutes
  • Finish with the chopped herbs, lemon juice and lemon zest

Plate your summer time fregola and enjoy it with a glass of soda or white wine!
