A to-go traditional Japanese dish when it’s freezing! Warms you up in chilly days.
Ingredients to prepare:
- 2 servings soba noodle
Soba Soup (Bonito & Kombu Dashi Broth)
- 650 ml Dashi (click on the link on how to make your own Dashi!)
- 2 tbsp Shoyu (Japanese soy sauce)
- ½ tbsp Sugar
- ½ tsp Sea Salt
Toppings
- 50 g boiled Spinach
- 4 slices Fish Cakes
- 3 tablespoon of fried Panko
Instructions:
How to prepare Soba Soup:
- Add soy sauce, sugar, and salt to the dash soup stock and heat over medium heat.
Cook your soba noodles:
- Boil a large pot of boiling water and add your soba noodles to the pot.
- Boil according to the directions on the package. After boiling, rinse off the wetness from the buckwheat noodles under running water.
- Soak your soba in ice water and set it aside whilst waiting for your soba soup warms up.
Prepare your toppings:

- Pan fry Panko crumps on a frying pan till they’re slightly brown.
- Squeeze out the water from the boiled spinach and cut into 5cm / 0.96 inch lengths.
- Cut the fish cake into 1cm pieces.

Place your soba noodles into a bowl then slowly pour soba soup over noodles. Decorate your soba noodle bowl with the toppings as you wish so it feasts your eyes before your appetite! FYI – added Inari topping for extra umame taste
