Butter cookie with dried Cranberries

A good recipe to try if this is your first time baking cookies! Simple ingredients with simple steps!

Ingredients:

  • 2 cups flour
  • 1 teaspoon of salt
  • 130 grams of Unsalted Butter
  • 1/2 cup sugar 
  • 2 egg yolks
  • 1 handfuls of dried cranberries (chopped)
  • 1 tablespoon of vanilla extract 

How to bake? See below!

  • In a big bowl, add 2 cups of flour, 1/2 cup of sugar, 1 teaspoon of salt, and 1 tablespoon of vanilla extract
  • Mix up the ingredient with a spatula then slowly add in the 170 gram of butter to the mixture
  • As you slowly add in your butter, add in the handful of chopped dried cranberries along the way

  • Knead the dough one a flat surface when all is well mixed in the bowl
  • Make sure your dough is not too flakey or too sloppy. If it’s too flakey, it means the dough doesn’t have enough butter. But if your dough is too sloppy/oily, add more flour to the batter as there’s too much butter in the dough
  • Roll the dough into a log and wrap it with baking paper. Then let your dough sit in the fridge to chill for at least an hour

  • Once the dough is chilled, use a sharp knife to cut the dough into slices of even thickness  
  • Place a baking paper on your oven tray and place cookies on a the baking sheet
  • Bake at 320F or 160C for 30 minutes or until the edge is JUST turning golden brown. The time to bake may vary depends on how thick your cookies are

Once your done, set your cookies aside to chill for 10 minutes before eating em’ or place them in a sealed jar/container!
