Mini Hasselback Potatoes with Chive Butter

Quick and simple fancy looking oven baked potatoes that’s suitable for any dinner event.

Ingredients:

  • Mini potatoes
  • Olive oil
  • Salt
  • Salted butter
  • Paprika
  • Chives

Directions:

  • Heat oven to 220 degrees C. Make slits in the potatoes, making sure to stop at least 1⁄4 in before the bottom (do not cut all the way through)
  • In a big bowl, coat the potatoes with Olive Oil, Paprika, and a pinch of Salt
  • Transfer to a large rimmed baking sheet, cut sides up
  • Roast until tender, golden brown and crisp, 30 minutes
  • In a small bowl, combine the butter and chopped chives

Dollop small spoonfuls of the chive butter over the potatoes, then transfer to a serving platter
