Quick and simple fancy looking oven baked potatoes that’s suitable for any dinner event.
Ingredients:

- Mini potatoes
- Olive oil
- Salt
- Salted butter
- Paprika
- Chives
Directions:

- Heat oven to 220 degrees C. Make slits in the potatoes, making sure to stop at least 1⁄4 in before the bottom (do not cut all the way through)


- In a big bowl, coat the potatoes with Olive Oil, Paprika, and a pinch of Salt
- Transfer to a large rimmed baking sheet, cut sides up
- Roast until tender, golden brown and crisp, 30 minutes
- In a small bowl, combine the butter and chopped chives


Dollop small spoonfuls of the chive butter over the potatoes, then transfer to a serving platter
