Clam miso soup

Miso soup never fails to warm ones heart in every season of the year. While basic miso soup only consist of mushrooms, tofus, and spring onions, but there is no harm in adding some extra ingredient — clams into the soup for special occasions.

Ingredients:

Instructions:

  • Place 4 cups water in pot
  • Bring to a boil over high heat. Add clams and reduce heat to medium, steam 5 to 7 minutes or until clams open
  • Remove the boiled water and add in fresh water
  • Discard any clams that remain unopened
  • While re-boiling your pot of opened up clams, add in 1 tablespoon of dashi under low to medium heat
  • After adding in the dashi, add in the chopped shiitake mushrooms and slowly bring it to boil

Once you’re done, use a ladle and scoop your miso soup in a bowl. Add in your chopped spring onion for extra flavour and colour.
